In your first year, you will thoroughly and thoroughly learn the knowledge and skills necessary to be a food specialist, such as how to make delicious sweets and bread, and what you should be careful of to provide customers with safe food.
By choosing a course in your second year, you can broaden your options for the future by taking the time to explore what you like and gain the ability to apply it.

Pick up Main classes in Department of Pastry Chef & Cafe

  1. Confectionery and bread making training

    Students will learn how to use professional equipment and machines. In the first year, students will focus on confectionery, learning the basics of Western confectionery such as making dough, cream, toppings, and piping through repeated practice. In bread making, students will learn basic techniques such as dough, fermentation, shaping, and baking.

  2. Cafe and drink training

    You will learn knife skills from scratch and acquire a wide range of skills in cooking French and Italian cuisine, as well as Japanese, Chinese, and other ethnic cuisines. You will also practice making basic drinks.

  3. Confectionery and bread making theory

    You will learn about the characteristics and roles of flour, butter, cream, sugar, chocolate, and other ingredients needed to make cakes and baked goods, and gain a scientific understanding of the process by which sweets are made.

  4. Nutrition

    You will learn how the nutrients contained in ingredients affect the body and what cooking methods can be used to make the most of those nutrients.
