Pastry Chef Training

We will be making Galette Nantais and Earl Grey chiffon cake. The instructor will be giving a demonstration.

The key to making Galette Nantais dough is to mix the butter, cut into small pieces, with the flour while keeping it in chunks.

While the dough is resting, let's make the chiffon cake! Pour the batter, made by mixing flour and meringue, into the mold.
