Quiche is a simple, traditional dish from the Alsace region of France. It consists of a crispy baked tart shell filled with a batter made from cream and eggs, topped with various ingredients, and then slowly baked in the oven. It's a savory tart that makes a great accompaniment to wine or a light meal.
At our restaurant, we've filled a quiche with dishes from "BISTRO Kondo-tei." Now, enjoy it while it's hot!

1986	Graduated from Tsuji Gakuen Culinary and Confectionery College. Worked as an assistant at Tsuji Gakuen Culinary and Confectionery College.
1987	Bigot Co., Ltd., serving at Restaurant Bigot.
1991	As a supervisor for the Deli & Restaurant Team at Daikin Co., Ltd., I have held numerous positions including head chef, store manager, and sommelier.
2001	BISTRO Kondo-tei Motomachi Opening
2004	BISTRO Kondo-tei Kitanozaka opens, Kondo-tei Co., Ltd. established.
2007	BISTRO Kondo-tei Motomachi has closed. Kobe Kondo-tei Quiche ya has opened.
2011	WINE&LUNCH Quiche ya Opening

What is your most memorable experience during your time at Tsuji Gakuen?

The training camp held in Hiruzen back then is certainly memorable. I also remember Professor Wada from the Western Spirits and Wine Department very well.

Please tell us an episode that made you glad to be a graduate of Tsuji Gakuen.

Thanks to the many people who were graduates of Tsuji Gakuen, I received a lot of encouragement and support.
